no, you only get the token, and whatever information is authorized in the request. Could be as little as just the token, nothing else.

I think in the Apple Pay introduction keynote they explained that Apple generates a unique number for every transaction and that that is all the merchant can see

There is a virtual card number called a "device account number" generated when a user enrolls in Apple pay. It's different from the card number, but used for all Apple pay transactions with that account. Apple pay has two modes based on how advanced the merchant terminal is.
