Apple, famously, doesn't collect personal user data. iMessage, for instance, is encrypted. Apple cannot see your messages even if they wanted to look.

I'm clueless about this, but are custom ROMs any help? Like a good security focused Android fork, that's still usable by non-techies? Seems like a very good project for someone if not.

Every phone is hackable, especially if you are a high value target. iPhones are worse in that they create a false sense of security, do not have a removable battery, and are difficult to do forensics on once you are compromised.

Snowden goes so far as to remove the physical camera and microphone from his phones (using an external mic/earbuds). Cheap android phones also let you remove the battery (and thus momentarily remove any possibility of any tracking capability) which iPhones do not.
