Emblematic of Silicon Valley mindset. U2F is a brilliant protocol; security keys are great. Once created, barely any attention to users/use.

Security keys are a protection against phishing. On your iPhone, you secure your PHONE and then using the app without security key is fine.

I do that now, but it seems that having TOTP enabled on the account brings the MFA security down to the lowest common denominator?

No, not even a little. It costs you no security to have TOTP enabled.
