Signal has gotten much better; WhatsApp is actually recommendable for me since it uses Signal protocol and is widely used.

Yes. It's is possible not to give FB your WhatsApp number. Depends on what you are doing of course, but often best available option.
Alternatives leak more data; untested; insecure, not widespread. I get the FB issue but e2e is e2e & metadata not necessarily a threat. sigh
