If I had to learn Java in one day, what would you tell me to do?

There’s basically two worlds of Java: Die hard pattern freaked out enterprise holdovers who write AbstractFactoryInterfaces on a myriad of “platforms”. Android which has a mostly closed ecosystem with nice tools by and for non-EE Java folks. I’d say “Go learn Android”.

Aaaaaaannnd be sure to stress this very fine point: Do NOT try to build any original apps for android. The pressure to be original will crush the learning. Instead stress simpleCOPYING like 10 existing apps in the emulator is enough. Too many people freeze up at “original”.

They had taken a class on java already but don’t feel like they retained much, and are looking to supplement, so it’s not *entirely* from scratch in just one day

In that case just building a bunch of Android apps would do the trick. It sounds like it’s not so much a problem of learning “Java” but more building confidence and skill in applying Java. Android would be a single platform with decent tooling and lots of resources to use.

If it hasnt to be "right", whatever that is, you can always default to `class ImJustANamespace { public static void itsJustAProcedure(...) {...} }` (which is imho what java looks in the wild anyways), and teach that "public static" like you teach "def" in LPTHW.
