I train Rust since 4 years (Meetup, Hack & Learn and actually as a paid trainer for 3 years now) and I _hate_ it when people bring up "learnability" in language RFCs. Most of the time, it's a bit of anecdata, scrapped together.
I used to speak about it a lot but nothing formal, mostly tweets. So, if someone claims their language is "easy to learn", but then points at only the few people who succeed at it, then chances are they're seeing selection bias for people who can learn just about any language, not any kind of real analysis of how it would do with anyone.
