Restaurants don’t go out of business because of unit economics of selling the occasional single pancake. They go out of business due to lack of demand (poor execution) or ineffective scaling (# of menu items, or tables). Also, Amazon does sell individual shows (episodes, even).

Most restaurants are not started by seasoned business people. They usually start a restaurant because of their talent to make food or because that's the best option for them. I just think that while many trendy restaurants can have poor service despite their success/resources

all the others are family-owned. Many have excellent offerings and service but just bad location or bad weather that messes up demand ( + they usually dont have enough runway to survive)
