The restaurant business is hard indeed - mostly because of rent+lack of demand predictibility which leads to food waste. Asking for one pancake doesn't work because of the unit economics of making a batch of pancakes ( we don't ask netflix to pay for 1 day access or one show)...

Restaurants don’t go out of business because of unit economics of selling the occasional single pancake. They go out of business due to lack of demand (poor execution) or ineffective scaling (# of menu items, or tables). Also, Amazon does sell individual shows (episodes, even).
