The biggest investment class that no one is working on: private equity -> venture funnel. Back a great operator in buying a small-to-mid-market business in a broken industry, implement best-in-class SaaS software, then build/dogfood venture-scale software to fill the gaps.

Unclear what you're trying to say but sounds like Constellation Software Of course it's naive to think you can just bolt software onto any company and see immediate results. Markets (people) aren't that simple
This is a silly example, but the idea is instead of trying to build something like Shyp from scratch, buy a small chain of retail shipping locations first.

That sounds like an interesting idea, but not an "investment class" to me. Do one right, and you'll have huge returns. Struggle with first attempt and you have a collosal mess.
