Paul Graham unintentionally captured my biggest problem with the default behavior of free markets: "What people need is healthy food. What people buy is unhealthy food. If you're a business, which one do you want to do?"

One observation from when I was in the food industry: "Healthy"as a marketing buzzword since it's arbitrary. Businesses labeled healthy (Non-GMO, GF, etc) food full of sugar, oil, etc. Consumers satiated biological drives for fat and sugar but felt psychologically good about it.

That's how businesses address the need for healthy and the want for unhealthy. Ethically, I'd work on producing healthy food that tastes unhealthy.
