My biggest frustration with all the VDOMs out there is that in practice you end up wrestling implementation quirks rather than learn DOM.

Literally all VDOM implementations do this. The only sane way to not have suffer from quirks to this degree is to use the actual DOM.

Got a hunch that in practice most people tend to specialize in a framework, rather than learn the DOM. So many downsides in doing so :(

Mozilla Dev Network is good. Specs are neat too. Googling for DOM + <thing you want> usually points links to either.
