Oh, an alternative no-wildcard hack would be to run https://caddyserver.com/ , write to the caddy file and send the USR1 signal to get a cert!

It's like "user defined signal 1" - does something custom; in the case of caddy it just reloads config, and then resolves SSL leases, etc.

Yeah, I think so - afaik there's no upper cap to the amount of subdomains you can get through letsencrypt - just no no wildcards

each subdomain would get it's own letsencrypt certificate, which should just work fine :D
