i really love making some coconut quinoa and curry early in the week then pan fry some tempeh and veggies to toss in a couple times a week

Chili con Seitan (w canned beans & mais). And pasta w pesto and raw onion, maybe some tomatoes appears ridiculously often in our house.

rice and peas put these in a pot: - 1 can of red kidney beans (with liquid) - 1 can coconut milk - 1 can's worth of water - 1 can's worth of easy-cook rice - some allspice cook it until the rice is soft and then eat it

I usually make a different big veggie stew once per week and have it for 3 meals scattered across the days. It's probably about 10 minutes of actual labor to soak + combine + cook (but a few hours of low heat cooking) and then 5m of labor at each meal. This week is carrot ginger

A pressure cooker can change your life for reducing cook times on beans, lentils, etc... It really opens up a huge variety of low effort high flavor meals
