It's veganuary, that's when I went vegan last year
(although I had been vegetarian for a while before) -
I've been on vegetarian diets on/off for the last 10 years. Briefly vegan too in 2015-2016. Exercising more now, and generally interested in picking it back up for the health benefits.

Add a little soy sauce too. The aminos and glutamates give it a very “meat” like taste. I use both (and kombu) when i make veggie broth even for western dishes. That and ground up dried mushrooms.

Yesss, I did add soy sauce too! Ohh, I like the idea of making a mushy broth — might do that next ^^
