      Okay, so my general takeaway is that I won't be doing this again for a *while*. Every step involved takes too long; from procuring ingredients to cleaning up after — too long. Doing more with dumplings would be fun tho. Making the dough was maybe 10 mins? Could see that work!

      Thinking of maybe doing some experiments with fillings. Got some vegan pals, and it'd be fun to be able to whip out some tasty snacks whenever they're over. Thinking mushroom + chives, but maybe others too?

      Mix flour with water until it's crumbly. Then let rest for 10 mins. Mix some vegetable oil through, and kneed until smooth. Rest for 1 hr. Dough is now done, and ready to be used!

          Try a hot water dough too! ~225g plain flour & ~180-200 ml boiling water. Put the flour in a food processor (you can do by hand but it takes a lot of energy) and pour in boiling water until it forms a ball. Let rest 1 hr.

          This is what cong you bing (scallion pancakes) and a lot of dumplings are made with. Also I make vegan dumpling with frozen & defrosted tofu and tempeh ground up with chives, soy sauce, black vinegar and shaoxing wine (sort of like pork & chive but vegan)
