This is fabulous, and so is the photograph of archaeological dumplings at the beginning of Valerie Hansen’s Silk Road (2012). I’m sorry I don’t have it with me or would share. Dumplings unite across space AND time!

My son, a chef in New Zealand, got a gig catering a Polish gathering there. Unable to find Piroghi or similar (the local Russian supermarket was uncooperative) he commissioned a Chinese friend with dumpling skills who thought the potato filling was crazy. But the Poles loved them

Contrary to popular belief, absolutely the best dumplings are the ones with smashed potato filling (called varenyky in Ukrainian). Just add sour cream or fried onions+fried small pieces of lard. Another popular filling: potato + cottage cheese.

The shift of mantou to unfilled buns is a later semantic narrowing. Sino-Xenic evidence (e.g., Korean mandu, Japanese manjū) indicates that 饅頭 originally encompassed a wider range of steamed bread foods, incl. filled dumplings more obviously related to Inner Asian manta/mantï.
