I found that but that's binary package building. Tools like pbuilder want source packages. I'm fine with hacks that wouldn't upstream.

What is the kind of project you are trying to package ?

Something like Ruby or rustup. My main concern is reproducibility of the binaries, but I control the env so Debian strictness matters less.

I'd build binary packages (I have that working) but pbuilder et al seem to help orchestrate the chroots etc you need to get good repro
