So would something like the simulations at https://phet.colorado.edu/en/simulations/category/new … be considered more of a “canned visualization” than an explorable explanation because of the lack of programmability? (I bring up education because that is the field I work in).

Yeah, I'm not sure I'd say they're either explorable nor explanations. In my first (clumsy) EE, you could live-edit the code (http://worrydream.com/TenBrighterIdeas/ …) and my best example has a much better editable representation for the model (http://worrydream.com/ClimateChange/#media-debate …)
