I know there aren't a lot of you, but a number of fixes for Builder on FreeBSD (and similar) landed in the past week to improve things for you. Test and let us know how it goes.
Tried building on my FreeBSD (11.1) desktop. libdazzle isn't in ports so tried building from source. It failed need 'gio-2.0' ['>=2.55.0'] found '2.50.3'. glib 2.50.3 is the version in ports and it has patches to support kqueue etc so didn't want to attempt building from upstream

I tried forging ahead by reducing the glib requirement (and commenting out the version checks in dazzle.h) and it failed on g_file_new_build_filename, which is in fact from gio 2.56. So I think I'm out of options at this point.

Yeah, I'm aggressive about being in lock-step with GNOME development. This is all that function does though: g_autofree gchar *path = g_build_filename (a, b, c, NULL); g_autoptr(GFile) file = g_file_new_for_path (path);
