Here in Norway (maybe elsewhere?) calling someone a potato means they add value to pretty much every dish they’re in.

I’m not sure but it may be mainly a term of self-description, “I’m a potato,” as a typically self-deprecating Norwegian way of saying “I’m a generalist.”
