Different institutions count different sorts of things as service, but basically you can think of it as any "non-standard" (not teaching/research) work you do to the benefit of students, colleagues, institution, and the profession.
For grad students it is usually "helped run the dissertation writers' working group" kind of stuff, but if you do other things it can vary a lot.
