The"sexual orientation" vs. "sexual preference" thing is rehashing an age-old debate about the flexibility of sexuality that IMO both sides have been wrong about forever; it's neither as stable nor as directable as hard-liners insist
For my part, I've always been more romantically & sexually attracted to men than women, but it'd have been much more reasonable to call me bisexual 10 years ago. I think part of this shifted with my increasing interest in having kids, which did work itself into what I find "sexy"

Yep. They've loaded meaning into one usage of a word which doesn't exist when the same word is used in other contexts. This is changing the very definition of words to manufacture offense/victimhood and to obscure communication with your adversaries. It's a tactic.
the oddest thing to me is that people pretend like they CHOSE their preferences. I'm not aware of ever CHOOSING what I prefer.

Who thought it would be a good idea to make gender/orientation semantics painfully difficult to understand is beyond me, we already had terms to use that covered everything. gay/bi/trans, nothing added was helpful.

The word preference doesn't have anything to do with choice. Carnivores have a biological preference for eating meat. That doesn't mean they can just choose to eat nothing but grass.
