I've noticed that in some transactions, the inconvenience and friction is the point. You can't buy a house with a 30-second email which makes it harder to claim you were duped. In the internet era, having to print and sign a paper serves a similar function. And I still hate it!

I spent 3 years signing my name on my credit card with pictures of people standing next to trees and nothing happened. It was at that point I stopped considering signatures to be valuable in any way.

Legally they don't do much. You can "sign" something by agreeing over email if you want. The question is more: will both parties abide by that covenant in the future, and if not, is there further proof that somebody intended to do so at the time. So it becomes a matter of risk.
