This isn't Chauvin's defense. This is a paper released in 2018, citing task force findings from 2009. This is absolutely going to introduce the possibility — if not probability — of reasonable doubt.

If an officer went way over the line and got punished for it, there wouldn't be these protests. The problem is where the line is, and the inability to get adequate redress when it's crossed (and race). If justice goes as normal, the country may explode.
