This isn't Chauvin's defense. This is a paper released in 2018, citing task force findings from 2009. This is absolutely going to introduce the possibility — if not probability — of reasonable doubt.

Lots of things that don't get enough attention, like fentanyl leading to unnecessary deadly interactions with police (many of which get no attention). But still safe to say we don't need 3 officers standing on someone who is lying on the ground.
