This is a particularly dark experiment, but I once asked a (now ex) boyfriend to pretend to attack me in front of my chihuahua. She came at him with all 10 pounds of fluff in full furry. That animal is ready to die for me. Perhaps more human than most humans on some layers

That's super adorable and I love your chihuahua for it! That could still be the case without sentience though, no? For instance: people drive cars while sleeping in some conditions (being supposedly unconscious). Observed (complex) behavior is not enough to infer consciousness.
