Why do sharks basically never eat people after giving them a test bite?

As for sharks,
it seems like there are enough humans in the water year round that humans would be a reliable source of food. It might simply come down to size. Humans “look” rather big. But sharks also eat seals I believe. Dammit. -
Sharks are thought to eschew humans as food because our meat is too lean. We aren’t fat *enough*, in a way they’re used to.
