Why do sharks basically never eat people after giving them a test bite?

I wonder why they don’t like the taste though. Not fishy enough? Lower fat content?

I imagine that we taste awful

I mean if I was a shark given the option between a chubby fishy seal and a chemically infused, processed diet human I’d go with the seal. Im not sure how you’d answer that question without asking the shark. Maybe there’s a branch of study focused on taste?
