I've heard it's because humans are at least usually a lot less fatty than shark's usual prey, so most of us probably don't have that full-fat flavor they're used to.

Because they mistake humans for seals. That’s why it’s often surfers getting attacked, look like seals from below. Sharks don’t like the taste of humans. I’m surprised the survey is 50/50 I thought this was common knowledge
