The 7 classes is insane too, at least it was for me. I much prefer to dive into something for 3-4 hours straight. The understanding gained is so much deeper. Classes should be 3-6 weeks long and much more intense, w/ students only taking 2 classes at a time, IMO.
At schools in the High Tech High system, they generally develop larger projects that integrate elements of several different traditional subjects and spend long stretches working on those. Something you can do when you're not moving kids between different adults all day!
I love the idea of a big projects-based curriculum. It's the best way to really learn and build self efficacy IMO. If a local school doesn't have a curriculum based around big self-managed projects by the time my future kids are of age, I think I am going to home school them.
We homeschoolers called those "unit studies".
