I don't believe the law should compel you to call me "she." I'm perfectly happy to live in a world where you are free to call me "they" and I am free to stop listening to you. For my part, I will always make an effort to respect sincerely-held preferences like these for others.

They/them is colloquially both a particular pronoun preference (e.g. for non-binary folks) and a default for individuals whose gender is unknown. If you know it's not my preference, and you know what my gender is, don't be an asshole.
