especially considering most work throughout history has been outdoors (hunting, farming, etc), so no need for sitting in buildings during the day

Indeed it is entirely baffling why many species of birds fly halfway around the world twice each year. We have not the faintest idea why all kinds of animals retreat to burrows, nests, &c. for part of the day. After all, they have neither markets nor team-served tools.

Migratory animals do this, arguably. Ones that hibernate even moreso, and IIRC some non-hibernating mammals alternate between summer and fall burrows at different depths.
