Serious Q: why don't these companies just throw employment hackathons & learn to observe the talent in its natural habitat? The tech interviews I've had seem designed to actually torture nerds

How to practice: ask someone who works at a company that interviews this way to give you a practice interview. Except for the actual question, this is very accurate.

Another way to practice is http://interviewing.io . I started it precisely because there wasn’t a good way to do it, and doing async coding challenges of failing in front of your friends isn’t nearly as useful
