Bio-inspired robotics! They can start with building a simple Braitenberg vehicle (electronics course included!) and move through swarm robotics (Reynolds boids) towards evolutionary algorithms and neural networks. Really inspiring stuff, "invented" by observing nature :)
Braitenberg vehicles should be easy to find resources on. "Bio-inspired artificial intelligence" by @DFloreano is a good intro. Courses by Alcherio Martinoli from @EPFL DISAL lab were what got me into swarm robotics. All college level though, not sure about material for kids.
