What is a reasonable expectation of the amount of time it takes to receive an email from an unknown party?
Is greylisting really the state of the practice among companies?

Understood. Specific recips at orgs that must regularly receive emails from fresh domains are not a good fit for greylisting. Common pattern: whitelist specific recipient addresses, to exempt senders *to* those addresses from greylisting. Might check to see if that's an option
