Trick question! The choice depends on what you're smoking. Hickory is a baseline, all-purpose wood. Steer toward pecan/apple for lighter fare, like fish or poultry. Steer toward mesquite for food that can handle a strong smoke flavor like brisket or lamb. Mix wood to taste.

I do a 50/50 mix of apple cider vinegar and water in the tray. Seems to work well...
