Trick question! The choice depends on what you're smoking. Hickory is a baseline, all-purpose wood. Steer toward pecan/apple for lighter fare, like fish or poultry. Steer toward mesquite for food that can handle a strong smoke flavor like brisket or lamb. Mix wood to taste.

Thanks. What purpose would cherry wood have? And is there something that can be used specifically for pork? And stupid question: can you smoke cheese?

I've personally not used it, but I suspect that cherry would fit on the "lighter" side with apple/pecan. I use mostly hickory for pork. And yeah, you can smoke cheese. But you'll need a cold smoker unit or you'll melt it! I suggest doing it when it's not below freezing outside.
