How to compile something high-level correctly, rather than something low-level efficiently. Your students are more likely to hack on Babel than on GCC.
To that end, you could also consider an emphasis on DSLs over general purpose languages, e.g. UW's "Hack Your Language!" course: https://courses.cs.washington.edu/courses/cse401/16wi/index.html …

I TAd this class, and the feedback from students was mostly negative. I am guessing, however, that was mostly due to Ras adapting a semester course to fit a quarter, and due to the particular choices of languages for implementation.

One thing I would replicate, though, is something like the final project, which gave students a lot of freedom to do something interesting. I was really impressed with the projects.
