To me it seems like you’re describing characteristics of the Map (that is, the preferable qualities of, certain kinds of programming environments) not the territory (of data science). CS1 could be made more accessible by embracing those qualities—the territory could be anything.
In my ideal future, CS1 wouldn't exist because why would you learn programming in the context of boring, one-size-fits-all applications? The fundamental premise of teaching programming as a standalone concept is flawed, as opposed to naturally integrating into existing contexts.
But in the near-term, where fully personalized education is out of reach, I agree with you. These are ideas that should be used to improve CS1.
I completely agree with your notion that CS should not be trying to cannibalize all other disciplines and should instead be naturally integrated.
