Haskell has become the lingua franca of the FP world, so that's the one you learn. IMO, SML has a shallower learning curve.

Load a model. Position it in space. Render it with flat shading. Light it. texture it. Place another object relative to it.

This will teach you the basics: vertex data, transforms and coordinate spaces, shading, texturing/sampling. All essential.
