What is a good learning project for Metal? What is something someone can target that is doable and will teach them a lot?

Load a model. Position it in space. Render it with flat shading. Light it. texture it. Place another object relative to it.

This will teach you the basics: vertex data, transforms and coordinate spaces, shading, texturing/sampling. All essential.

Everyone will give you different lists, bc everyone has different aims and abstracts away the details they care less about.
