Vorkosigan series, by Lois McMaster Bujold. Cordelia Naismith and Miles Vorkosigan are among my favorite SFF characters. Also, aren't you forgetting JRRT and CSLewis and their ilk? What about Lewis Carroll, does Wonderland count?

I feel like the Dark Tower series sort of cheated its way to the top by incorporating Stephen King’s entire corpus as part of the same universe.

There’s a whole book he wrote post-DT which culminates in the protagonist shuffling seats with one of the minor characters in DT, which butterfly-effects his role in the series. Pretty epic scale for a fantasy series.
