In what order should I read LeGuin books? I've only read one and that was so long ago I forgot which one it was.

Any order! But I can especially recommend the Earthsea trilogy and The Left Hand of Darkness.

Earthsea is generally lighter. Word for World and the Dispossed are diadetic, well done but potentially offputting. Most of the others are dense but story-driven.
