The less rule-governed pen and paper RPGs do that for me. We play Call of Cthulhu that way. Our GM is really good at letting us do stuff that's not covered by the campaign book.

Lately, making art using code for my plotter. The experience often involves a few days of obsessive pondering. "Oh thats an interesting idea. How would I make that?". Finally I code something up and start exploring the space of fun variants and modifications.
