Professions that for some reason assume outsiders should care more about them: design, architecture, UX, musicians... I don't get it. Why?

It's all things that most people think they can do but can't actually. Same for writing, game design

Yes. There is this generalized impression amongst clients that they could do the same work if they had the time.

Same for accounting, if you want to step out of the arts. The problem is the work that goes into such commissions becomes easy to dismiss.

I have never felt accountants demand too much attention from non-accountants or moan about going unrecognized 😄.
Perhaps so. But the professions aren't as formalized in many countries as they are in the States. This embeds precariousness. People moan.
