Professions that for some reason assume outsiders should care more about them: design, architecture, UX, musicians... I don't get it. Why?

Quite possibly because it isn't as necessary as designers hope? I'd challenge the 'unfortunately'; I think design is mostly correctly valued
I didn't say no value. I said correctly valued. People buy roughly the right amount of design, at the right time, at the right price.
So? You could say the same about other aspects of things. Everything is energized, materialized, produced, accounted for, communicated about
Or different levels of commodity scarcity. Or different levels of IP in the tech. Or production cost. My point is design is not special.
There are no major extra-market distortions of supply and demand dynamics, unlike say in healthcare or education or military. At least in US

There are countries where the preferences of autocratic political leaders leads to nationalized and distorted markets in design.

All of these have an aesthetic that's experienced in a visceral and subjective way. Food, wine, comedy, and debate are sorta that way, too.
