I think that's only an issue if you try to open a high-end restaurant in that cuisine, gentrifying and whitewashing their market 😀

yah I'm exaggeratng. but there's def plenty of weirdness around authenticity in cuisine. you're supposed to be careful w/o fetishizing?

I think it's easy to navigate that sensitivity simply by having genuine in-person connections with natives of that culture
