I have no formal culinary training but some flavor combos just seem wrong to me, like tofu and cheese. Wonder where such instincts come from

tofu can sub paneer in some indian dishes, but not vice versa (paneer in chinese stir fry=yuck). And both together = bad.

sure, but you can't stir fry cheese, either, so I figure whatever tofu/ cheese mix could be paneer instead

actually you can. Just needs stronger spices to go with it. East asian spices get overwhelmed.

actual onions. Peppers go well, as do ginger, garlic, coriander, cilantro, lime (not too much)
