I have no formal culinary training but some flavor combos just seem wrong to me, like tofu and cheese. Wonder where such instincts come from

Came up while making mexican stuffed peppers. Stuffing was rice-beans-cheese-veg. Thought of adding tofu, then went "yuck"

it's akin to Mexican fresh cheese, too... this fusion may have worked well. Quit consulting, open a food cart.
