Can someone point me to an account of why Culture ships have to choose their own, irreverent names? I recall there being a deeper reason?

I haven't read anything suggesting it. It seems like it was just a running gag joke amongst the ships cus everyone took naming serious.

I think there were cases where a mind changed it's name, and this was important. A life stage change, etc.
